Cheesy Breakfast Burrito

Serving Size: 1 large burrito

Ingredients

2-3 eggs, beaten
¼ tsp salt
Cracked pepper
½ tsp butter
1 large tortilla wrap
½ cup SunSpun Cheese Blend
¼ cup cooked black beans or pinto beans

¼ cup diced steak, chorizo, or bacon
3 tbsp bell peppers, diced
1 tbsp jalapeno, diced
Additional vegetable toppings such as; avocado, cilantro, tomato

Method

Make scrambled eggs: In a bowl, add beaten eggs and season with ¼ tsp salt and a few cracks of fresh pepper. Add butter to a small sauté pan. Place over medium-low heat until the butter is melted. Add eggs and cook over medium-low, stirring constantly. Once eggs are cooked, transfer to a plate while you prepare other burrito ingredients. 

Prepare the burrito: Place a large tortilla on a flat clean surface. Place SunSpun cheese blend in the centre of the tortilla. Top with beans, steak, peppers, jalapeño, and any other toppings. Place scrambled egg on top of all the toppings. 

Fold and sear the burrito: Grab opposite sides of the tortilla and lift to form a taco shape with the filling in the centre. Fold one half of the tortilla away from you to cover the filling then tightly bring the pointed ends inwards. Roll the tortilla away from you to seal with ends and form a log shape. If you need a visual of the folding method refer to the reel on our Instagram page. Place a non-stick sauté pan over medium heat. Place the burrito in the centre and cook for 2 minutes. Flip and cook for another 2 minutes. Serve hot.
